Hi Ken! I'm glad you had success with our recipe and good on you for keeping and eye on your dough and making decisions based on observation! Most bread dough rises best between 75-78 degrees and if your rising temperatures are warmer than this you will need to shorten prescribed rise times, often significantly, in these hot Summer months.
