Hi Barbara,

We'd suggest making the recipe at least once with no changes so you get a feel for the outcome as written. You can then add an egg to the recipe, you shouldn't need to change any other ingredients. The bread will be more "cakey" with added eggs, which might be what you're shooting for, or perhaps you'll prefer the original. Side by side baking test, maybe?  Have fun experimenting, we'd love to hear about it!
