Hi there, Rachel! The loaf might have a rather coarse texture without the second rise so we wouldn't recommend skipping it. At this point, we'd recommend dividing the dough into two loaves. It sounds like you have a really active starter, you might try cutting back the amount of sourdough starter by 25% and replacing it with equal parts flour and water by weight to see if that helps control the rise of the dough a bit.
