I've made this excellent bread in my 9x4x4 uncovered pan, several times, and am now ready to do the math and use my 13x4x4 covered pullman pan ... I'm hoping that my KitchenAid can accommodate the extra volume! With previous loaves, I've been convinced that my bread would burn at 425 for 45 minutes ... I start off at 425, then turn it down to 375, and it takes 45 minutes to reach 204. My loaves have nice med-dark tops, but, blonde sides and bottoms. I think that a covered pan will make me secure to bake at 425 for the entire 45 minutes! I'm using a Breville smart air toaster oven, and (even without convection) it does tend to heat higher, and cook faster.
