Oh, my! I bought the pain de mie 9x4x4 covered bread pan, and really thought "Meh." I made this recipe for sourdough using my own sourdough starter, and figured that since I spent the money on this fancy bread pan, I'd better use it. I followed the instructions in this recipe, and OMG! I must say that "Meh" has nothing to do with this pan. I'm going to take my two existing bread pans out to my garage and use them for parts trays. Recipe was wonderfully easy. I actually couldn't bake the loaf when I was supposed to, and ended up waiting an extra 3 hours while it sat raising in my cold oven with the light turned on. The dough was all the way up to the top of the pan, and I worried about the flavor of the bread. I shouldn't have. I think this recipe will be my go-to recipe. Before, I used a dutch oven, which was so heavy, that when it was heated to 475 degrees, it was dangerous. Yes, it produced a beautiful round of sourdough, but it scared me to lift the pot out of the oven. So I really recommend this recipe, but I REALLY recommend the pain de mie bread pan. It makes a really pretty loaf.
