This process and recipe are so forgiving! I ran out of everything except AP Flour, and it's made a wonderful loaf. I was doubtful that such a small amount of starter would give that much lift, but I was so wrong! The dough more than doubled during the bulk rise. Go yeasty beasties go!

I appreciate all the tips and info in both the article and the responses to comments. :)
