This is precisely what I've been looking for - a no nonsense, practical, doable version of sourdough that gives you room to still play and experiment. There's days I WANT to be fussy over my bread, but having transitioned to fully baking all my household's bread instead of purchasing any, this is what I need for those many weeks when there's just not the time or energy to spend an entire day, or more, on intense bread babysitting. My first loaf of this just came out of the oven, I can't wait to try it once it's cool!
