Just read this comment as I prepared to make the second loaf with this one being in my new Pullman pan. Wanted to thank you for the clarification on Bread flour vs. AP. I’ve read on your site it’s okay to substitute AP for Bread flour, but have never read about adjusting the moisture content. I’m excited to see the results. Appreciate the site, the great products and all the education you provide. Thank you!
