Ohmigoodness, made this today, and we are hooked. Used the 500g bread flour and 120g of white whole wheat. Hubby is type 2 so sourdough bread is his go-to (less of an impact on blood sugar). Dough was a bit wet, couldn't score it, and got the tear, so I'll hold back a bit on the water next time. But I just want to say that we do not *care* about the tear! I also do a 3-day sourdough, and this isn't as sour, but, wow, I'll take it for an everyday. It's delicious. Put Everything But the Bagel on top. I'm looking forward to making my lunch tomorrow with this bread. THANK YOU!
Also, I had neglected my starter completely for the last couple of months, refrigerated but no fed, and it came *roaring* back. So I'm also here to say that sourdough starter isn't a newborn, and doesn't have to be treated as such. :)
