This bread is delicious! I followed most of the directions exactly. I was worried that I let it rise too long (24 hours), but it didn't adversely affect the loaf. I used freshly ground white whole wheat flour. I had some rye, so I was able to include that. I love the sesame seeds! I used the Emile Henri long Baker, so the loaf is not as tall as yours was in the photos. I baked it uncovered. I would post a pic, but there doesn't seem to be a way to do that. I am looking forward to experimenting with more types of flour.
