Hi Carol! We haven't tried using Einkorn flour here but you're welcome to experiment with it! We wouldn't recommend replacing all of the flour with it but you could replace about 25% without too much of a change in outcome. The more whole grain flour you use, the less open the structure will be and it'll also make for a slightly shorter loaf. We hope this can help and happy experimenting!
