I baked this absolutely delicious bread today with the sourdough I’ve been lovingly maintaining for the past year. I’ve really wanted to find a good loaf bread that would be light which it is. However, contrary to your recommendation I used the standard loaf pan. Much to my surprise the second rise tried to escape and came over the side of the pan. I saved and baked it, and quite frankly while no beauty, it’s delicious and the crumb is really lovely. I will listen to you the next time, and there will be a next time. FYI I did 60 g WW and 60g rye.
