Hi there! That really depends on whether you're looking to increase the yeasty flavor or the sour flavor, as the two come with opposite kinds of advice. For more sour sourdough, for example, you'll want to give your loaves a cool overnight rise in the refrigerator, but for yeastier flavor, you'll want to skip this and allow your dough to rise at room temperature over a shorter period.
