There are indeed sourdough recipes that are 100% whole grains, but you should definitely go into the process with the understanding that these are denser breads, and unless you add vital wheat gluten or other ingredients to help improve the strength of your dough, they'll have difficulty rising. Our Whole Wheat Sourdough Bread is a good place to start. It calls for added commercial yeast, which you can try and leave out, but this will increase the rising time substantially.
