Oh, PJ, this bread is wonderful and couldn't be any easier.
I used the 500 g bread flour, 60 g whole wheat, and 60 g rye.
We had some za'atar and I used that to season the sides and bottom of the loaf and sprinkled it on top of the dough just before putting it into the oven.
Will definitely, definitely be making again.
