Great post. It's so easy to get absorbed in all the many detailed prescriptions for how to make sourdough bread. I'm sure all this complexity has discouraged many people from even trying, which is a shame. The no-nonsense simplicity of your approach for this bread is much needed. I followed it last week and the bread was excellent.
