I have become a bit of an experienced hearth baker from my museum work I taught myself to make basic settlers bread, “ shanty loaves”, based on the methods and recipes in the 1855 “Canadian Settlers Guide” by early settler, Catherine Parr Traill. It is baked in a bake kettle by the fire and the yeast I make is “ hopbarm”, basically a simple potato and hops sourdough which you use and replace as you go, just as you do.
