Finally a baker says it out loud publicly! There’s absolutely no need to follow all these crazy sourdough recipes! I started my sourdough just about 10 years ago and have been baking bread almost weekly since. Sometimes the started sits in the fridge unfed for a couple of months - it’s fine. I also don’t throw out any discard - crazy waste! Every few weeks I bake an extra loaf because I have enough starter and freeze it for a week when I don’t feel like baking. I feed my starter at night, the next morning I make the dough, which then rests till the afternoon or evening when I bake it. However I have time. I basically forget about in between the 3 steps. I have rye starter and use rye and bread flour for my bread. My family loves it and it’s so easy to make!
