This came out great! It worked with a 9x5 loaf pan and baked evenly even though I forgot to slash the loaf. I placed it in a roaster with the lid on for the first 20 minutes of baking for oven spring insurance and used a recently fed starter. I do think this will adapt nicely with different ingredients. Short of time, I placed the loaf in the fridge for several hours and pulled it one hour before baking. This will be a regular in my rotation of bread baking.
