Looking forward to trying this. I don’t have a 9x4 pan (and don’t want to face the music if I buy yet another pan!!) but I do have the 13x4x4 pain de mie pan. Can this be scaled up? If so, by how much? And how long do you cook with and without the lid if I use that? Thanks so much.
