I'm guessing the riper the sourdough starter is, the faster the bread will rise too.
I can't wait to try this recipe, but I've just ordered a 9x4x4" pan, which I really want to use, so I guess I'll have to wait.
Thank you PJ for all the help you've provided me for my baking this winter. I'm really having fun with it.
