My mother-in law (Polish) , made hundreds of these by herself . Her filling of choice was potato/cheese . She also would make some with chopped cabbage which she really liked . Enter my Hungarian neighbor from our first home and her blueberry pierogis . OMG!!! No onions but fried lightly in butter . Never had them since but never forgot them . Since MIL never wrote a recipe we have been without for 50+ years . This recipe sounds exactly like hers . Now, I have no excuse . Easter is coming and Lent is first . Lots of meatless Fridays and now, armed with my BFF's recipe (P.J.), my kids will have one BIG surprise ! Really, I should say 2; they'll have the goods AND the recipe so maybe one of them will be the next pierogi maker for our Polish/Irish side of the family . LOVE again , to PJ . She's the best !
