Nancy, I'm sorry to hear that your breads are not baking up like you wish they could. As far as I can tell, one of the problems you are encountering is the inability to introduce steam into the oven. That is why you are not getting the crusts you want. You can take a look at our article, Convection Oven vs. Traditional Oven, but I think your best bet is to read the Breville owner's manual and also see if there is a Breville bread baker's user group that you can contact.
