I am enjoying all the sourdough recipes. My question concerns tips for using a counter top electric convection oven for baking. Our stove gas oven quit early in the pandemic and we bought the largest Breville to keep baking bread. The loaves are pale and the crust is not crisp like those baked in a Dutch oven. One tip I’ve used is covering the loaf pans with foil to prevent excessive browning on top.
