I've bought several bread making books and have found that artisan bread does not require any special flours or ingredients. I love your website and your products, but you're getting way too expensive and complicated. I also looked around a bit and found great quality flours for much less than what you charge for it, including rye and whole wheat from family owned flour mills. Paying $6.95 for a mix that makes 8 scones is insane. They're cheaper, and taste better, if made from scratch. Come on, King Arthur, you're turning baking from an endeavor anyone can enjoy to a pastime for the wealthy.
