Hi Amy, as mentioned in this article, baking gluten-free without eggs can be tricky, and I think you'll have the most success if you can find a gluten-free recipe that has already been written to be vegan, at least when it comes to eggs. While butter and milk are generally easy enough to substitute for with vegan alternatives, eggs will require some experimentation. If you're able to find a good gluten-free vegan recipe, that will get you off to a good start and may give you some good ideas for how to substitute in other, similar recipes.
