Great article! I have a grandchild with an egg allergy, and I love that you list so many options to try. I will definitely be trying the aquafaba!

That said, I have a popover mix that calls for 4 eggs. According to my research, the eggs help provide a structure stretchy enough for the popovers to trap steam without breaking open. Do you have any suggestions which egg-substitutes would be best for popover mixes?
