Hi Greg, you could certainly make a successful starter with the flours you mentioned, however it's difficult for me to say how it will perform in your suggested bread recipe. Kamut does develop some gluten, so I would check to make sure that this is a grain your daughter can tolerate. We do offer a gluten-free sourdough starter recipe that is made from our Gluten-Free Measure for Measure Flour. However, our current gluten-free sourdough approach includes this starter, which is made from our Gluten-Free Bread Flour, and this gluten-free sourdough bread recipe.
