Very informative article! Learn something new every day! Thank you for the superb GF mixes, so much easier to use than having to make my own flour blends. As the article pointed out, cross contamination is a big challenge that many people just don't understand! Keeping a GF kitchen is very difficult when you are the only one and, doubled dipping can be a serious issue, too! In our house we need three versions of many common items; gluten and dairy free for me, sugar free for my husband and regular for the rest! Also, a separate toaster for me!
