What a great article, loaded with great information and a great resource for those not familiar with gluten free restrictions. I remember when my daughter was first diagnosed, I attended a Gluten free food fair and King Arthur had just come out with their gluten free line of products. They were making gluten free pancakes at the fair. I was already very familiar with King Arthur four and was thrilled to see a great alternative for our new dietary considerations.
