THANK YOU, PJ!!! I spent 4 hours late last night attempting to find instructions specific to sourdough/bread machine bread production and woke up to this beautifully authored article. I will be baking my first loaf of sourdough in my bread machine today and can say, thanks to you, I'm confident the results will be fab due to your timely post! I'll be sure to report back...TBC
