Hi Elisabeth, you're definitely taking the right approach by maintaining your sourdough starter with regular flour and saving the Keto Wheat Flour for the dough portion of the recipe. The more Keto Wheat Flour you add to your sourdough bread recipe, the milder the flavor is likely to be. You may also get a softer crust and a lighter colored loaf, but otherwise the bread should still bake fine.
