Hi Larry, I'm sorry to hear you didn't get the results you were looking for with the method I suggested above! Were you able to weight you flour? It sounds like you might have added too much flour, which is easy to do when you measure your flour by cups. For best results we recommend either weighing your flour or using this method to measure your flour by cups. It's also possible I overestimated how high this bread would be capable of rising in a 9" Pain de Mie pan, so perhaps putting it in the oven when it hasn't risen quite so high in the pan might yield more oven spring. You might also want to consider baking this bread without the lid in this pan.
