In most cases it's no longer necessary to dissolve your active dry yeast in lukewarm water, however, because this recipe calls for using "cool" water, it might be harder to get active dry yeast off to a good start in this particular recipe. If you don't have instant yeast available, I would recommend dissolving your active dry yeast in about 1/4 cup lukewarm water and letting it sit for about 10 minutes before aading the remaining 1 1/4 cups of cool water.
