Just made my first loaf of the keto friendly bread. I thought it was doing fine and rose over the top of the pan. Once it was in the oven, it totally collapsed. Baked to 193. The texture and flavor is pretty good, but clearly lost all it’s height. Some comments spoke of over proofing. I let mine proof in the oven for 2 hrs. Any suggestions would be appreciated.
