Hi Gordon! That's not something we've tried ourselves but we don't see why you couldn't add some sourdough starter to this recipe! Check out our Adding sourdough to a recipe blog article for tips on adjusting a recipe to accommodate the starter. The article talks about unfed, discard starter but you're welcome to try it with ripe starter if you'd like. We wouldn't recommend leaving out the commercial yeast altogether though, at least not on the first try, you could reduce the amount a bit though if you'd like.
