Sadly, anyone watching their sodium intake will have to be very cautious about using this flour. At 55 mg. per 1/4 cup, that's 220 mg. per cup. This recipe comes in at a total of 4310 mg. for the whole loaf, making each slice (assuming 16 slices in the loaf) almost 270 mg. of sodium. That's a lot more than most commercial bread. I guess I won't be going low carb any time soon.
