Hi C, we've never worked with a flour blend quite like this, but if you're getting gummy, rubbery results you might want to try reducing the xanthan gum a bit. For 4 cups of flour, you might want to try more like 1-2 teaspoons of xanthan gum and see if this improves your results. You may also find this article on converting recipes to be gluten-free helpful, in terms of how much xanthan gum you need.
