Hi there, Ellen! We always recommend using flour within its Best Used By date for the highest quality results, but there are some cases where it's still OK to use certain flours past this date range in a pinch. Our helpful blog article Can I bake with out of date flour? explores some nuances regarding when flours might reasonably be expected to perform past their stated shelf life, as well as clues bakers can add to their tool belt when trying to determine freshness.
