I tried these with a lot of alcohol because I wanted a lot of flavor. I used 3/4 cup liqueur in place of water with the gelatin and reduced the water in the syrup to 1/4 cup. The gelatin didn't bloom as fully, and the marshmallows didn't get very fluffy. The texture was somewhere between a marshmallow and a soft gummi. I kind of liked that texture, though, and they were delicious. My favorite was kahlua, dusted with 1/2 powdered sugar and 1/2 cocoa powder. The Irish cream were also pretty yummy. I'm looking forward to trying some with a strong, dry wine.
