I made maraschino marshmallows once. I cut up maraschino cherries and let them dry on paper towels for a while. I bloomed the gelatin in the maraschino juice instead of water. I added the dried cherries at the end of the betting process. I cut them out with a heart shaped cookie cutter and dipped them halfway in dark chocolate. They were pale pink with dots of cherries. Very pretty and very good. I’ll add more dried off cherries next time.
