Hi there, Phyllis! Yeasted sweet breads that are gluten-free are particularly tricky because of their long rise. We don't have a recipe for traditional panettone that we'd recommend making gluten-free but we do have a Panettone Muffin recipe that could be made gluten-free! With this muffin recipe, you get all the flavors of a panettone but the recipe can be made with our Gluten-Free Measure for Measure Flour. You could even bake the recipe in a 9" x 5" loaf pan for a festive loaf. We hope this helps and happy baking!
