Hi Melissa, the olive oil and salt, along with the water, will add both to the texture and flavor of this pasta, and we highly recommend making the recipe as is. Because of the eggs included in this pasta dough, drying it at room temperature could present a food safety risk, so we also recommend storing the fresh pasta as the recipe indicates.
