Hi Tina, PJ's blog on pan size conversions will get you started in the right direction for your pie pan conversion: To figure the capacity of a round pan, you’ll need to recall a bit of geometry: the radius (half the diameter) of the pan, squared (multiplied by itself), times pi (3.14). So the area of that 9” round pan? 4.5 (radius) x 4.5 (radius) x 3.14 (pi) = 63.6, which we’ll round to 64”. Now, admittedly, pie pans aren't exactly like round cake pans, but their relative capacity is what you need to determine here, so if you factor the 11" pie pan capacity using the formula above (5.5 X 5.5 X 3.14 = 94.98, round to 95") vs. the 9" pie pan capacity (see above = 64"), then you're going to decrease your recipe by 64/95 = .67. In other words, a 9" pie pan holds about 2/3 the amount that a 11" pie pan can hold. If you multiply the weight of each ingredient in the 11" pie recipe by .67, that will give you a recipe that should fit in your 9" pie pan. This is a rough approximation, since pie pans can vary in depth and the slope of the sides, but assuming your 9" pie pan is a deep dish pie pan, this should work fine.
