Hi Chris, It sounds like your meringue is "weeping". This occurs when the sugar that was added to the egg whites doesn't fully dissolve. Try adding all of the sugar into the bowl in the very beginning with the egg whites. That will ensure the longest time possible for the sugar to completely dissolve. Hope that helps and happy baking!
