Okay, so far I have made bread, rolls and pasta with the new Keto flour. The bread and rolls were perfect! Not white bread, but real bread that isn't half the size of a normal slice for 8 carbs, and doesn't taste like cardboard. The pasta was a little more difficult. You have to get the dough smooth, but not overworked; it takes a little longer to cook and is a little more chewy, but not as bad as some of the whole wheat commercial pastas. I ran it through successively smaller rollers, flouring thinly but completely between runs, and it came out well. We made a lemon cream sauce, but I think with something heavier like a red sauce, you wouldn't be able to tell the difference. Next Up: Keto pancakes on Sunday!
