Hi there, M! Our team found that it worked best to create and maintain a sourdough starter using conventional wheat flour and then use the Keto Wheat Flour to make the dough for the recipe. They also note that it works best in recipes with shorter rise times, like in our Rustic Sourdough Bread and Naturally Leavened Sourdough Bread recipes, than it does in those with longer overnight rests.
