Actually Keto is eating so that you are in a state of Ketosis, which causes the body to burn fat for energy rather than carbs. This flour provides that, since it is made from the isolated protein on the outside of the wheat germ, which is gluten which is protein and fiber, not carbs. I can attest to this being Keto, because I bought some from Amazon to try and it had NO glycemic load, and since I am a diabetic, I more than most would know that. It didn't raise my blood sugar the way normal all purpose flour or whole wheat flour does. I stayed in Ketosis using it in a baked bread. This is the very best Keto flour I have ever used, and I have used them all. Of course if you are gluten intolerant you wouldn't want to use this, but if not, it is great for Keto.
