Hi there, Jan! Boiling the bagels in a water bath is what makes bagels shiny. This process gelatinizes the starches which makes the surface shiny and give the bagels a nice chew. Most of our bagel recipes include water bath with non-diastatic malt powder but brown sugar or molasses can also be used!
