This is not about baking specifically but might be useful: As an empty nester, I often reduce recipes that make four or six servings. When I make half a recipe for something that includes a sauce (like a main dish) I've found that the sauce should not be halved. I reduce the sauce by less than half, or just make the sauce following the original recipe.
